    Coconut Rice

    I had some leftover white rice from ordering Chinese a couple nights ago. I wasn't too thrilled with the dry cube of bland white rice so I spiced it up with some of the flavors I had around the kitchen. It soon turned into coconut rice. It's delicious and very simple to make too. As usual I just made up my own recipe, but here's the basics.

    Ingredients:

    White Rice
    Coconut Water/Coconut Extract
    Cheese (preferably Mozarella)
    Spices (I prefer Salt, Lemon Pepper, Garlic Powder, and Onion Powder)

    First cook the rice and pour off the excess water. Then put in the coconut extract and stir it while heating on medium. You want the rice to absorb the liquid until it looks almost fluffy. Then mix in the cheese until it gets an even creamy and sticky consistency. Toss in a dash of all the spices and mix it together. Once it's cool it's ready to eat.
