The next ship I recommend going for is straight to the Vexor. This is one of the easiest Gallente Cruisers to get your hands on and it is very versatile. It can use 4 Miner 2 turrets and also equip a salvager or tractor beam. I more than doubled my mining speed when I got mine. You can also hold 100M3 worth of drones, so you can just keep spitting them out in combat. It also has a pretty big cargo hold with 480M3 space. To pilot one of these you will need the following skills: Spaceship Command 3, Gallente Frigate 4, and Gallente Cruiser 2. This will take some time to train but it's not bad compared to many of the other ships. They are a bit pricy at 4 million isk each, but they pay for themselves quickly by greatly increasing your mining yield.
