One of the reasons Apple refused to put flash in the iPhone, is because it's a resource hog. It can slow down even well equipped machines and a lot of the time it's a big pain in the ass. Having said that you can use a new extension for Firefox called FlashVideoReplacer that does just that, it replace flash video with another plug-in like Quicktime and Windows Media player.

You still need the Flash plug-in, but the video doesn't play in the flash video preventing it from slowing your system. FlashVideoReplacer works for YouTube, Vimeo, and Blip.tv, so when you go to one of those sites the Flash video player will be replaced the a different one. For YouTube you can even choose the playback quality in the setting menu.

The plug-in works great on Mac, Windows, and Linux, especially if Flash doesn't play nicely on your OS. It does remove some built in functions of the flash player you're replacing like the ability to view videos full screen for example. All in all if you're fed up with flash give it a try.
