Let’s Talk Cooking

Cooking for the family has always been a challenge because I‘ve always had a full time job. It was quite an adjustment for me when I got married three years ago. My husband is one of  those people who wants to sit down together at every meal and he prefers home cooking to restaurant food about a thousand to one. I guess he’s got a good point, I mean, why do we get married if we’re not going to do things together? He knows there are times when we can’t dine together; he’s had forty years of work experience so he knows you can’t always do what you would like.

Given that I must work and I also must prepare food for the table, we have come up with some strategies to make my life a little easier. First, I go to work and put in my time at my job. No problem. Second, I’ve found it convenient to do my grocery shopping on my lunch hour and on the way home from work. With the price of gas these days I don’t want to make any extra trips to the store. I like to do the shopping because I know what I want. If he goes to the store, I don’t know what he’ll bring home. Men in grocery stores? Please!  All they’ll buy is cake, ice cream, and beer! Third, to make the food preparation easier, I make up a large batch of pasta (he likes pasta) so we can eat out of the dish all week.  One cooking session gives us six – ten meals at a time. This is a great time saver and he can feed himself when I’m at the office. Fourth, to make these large dishes of food, I’ve discovered that using simple recipes is a big help. I’ve got a few cookbooks that feature only a few ingredients. Five simple ingredients, mix them together, and I’m through in fifteen minutes, yay.

and, like you, i'm a big fan of cooking for more than one meal at a time too. one trick i use a lot is the freezer. i'm especially fond of 8oz containers that can hold enough for a single serving of something. eight ounces of just about anything out of my freezer, a side salad and a tortilla or toast and i'm set for dinner!

I have been having the same problem finding time to cook, and I can't afford to eat out all the time. I work full time, tutor two nights a week, try to get an hour or two of swimming in to keep in shape, and when it's all over there's always cleaning to be done. I love living alone but there are some definite disadvantages to it. I used to cook a lot, but then again I wasn't usually asleep before 1 or 2 AM and that left me barely able to function at work.

When I do cook, it's usually enough for a couple meals, so I get to munch on leftovers for a while. It takes a really long time for me to cook something, often because I'm constantly tasting and tweaking it until I feel it's got the perfect flavor. My meals are anything but simple and quick.

And when my dad goes shopping the last things he buys are cake, ice cream, and beer. He usually buys things like yucca, pickled cactus, and parsnips.

I used to love cooking so much I actually took a year of classes in Tuscany. But since having a child, and taking a job that gets me home at 6:30 or 7, I usually leave the cooking to my husband--and his cooking is terrible. If I have to eat another hamburger or hotdog...! I'd love to find some quick, delicious recipes that can get me in and out of the kitchen in 15 minutes and serving something nutritious.

Well, unlike the rest of you, I do not love to cook. I cook to save money and keep healthy. I might have more fun cooking if I used the simple meal approach. I spend 1 hour minimum in the kitchen and since I work full time and leave work pretty late and have 2 kids to go home to, it gets really hard and I start way too late.

Don't you sometimes just wish there were a few more hours in the day. By the time I'm home from work, most of the day is already over and there's so little time to actually do anything like cook or clean. I'm still new at this, and I'm slowly learning to juggle everything and still keep my health.  I'm getting back into cooking again, but I'm learning to make it a quicker ordeal.
